Ingredients

Cheese and olive loaf
  • 1 cup (150g) self-raising flour, sifted
  • 2/3 cup (80g) gruyère, coarsely grated
  • 1 cup (120g green olives, seeded, chopped coarsely
  • 75 gram ham, chopped coarsely
  • 2 tablespoon fresh mint, chopped coarsely
  • 1/2 teaspoon ground black pepper
  • 4 eggs, beaten lightly
  • 80 gram butter, melted

Method

    Preheat oven to 200°C (180°C fan-forced).

    Oil a 10.5cm x 21cm loaf pan.

    In a medium bowl, add flour, cheese, olives, ham, mint and pepper. Add egg and butter; stir until well combined. Spread mixture into pan.

    Bake loaf for about 35 minutes, or until browned lightly. Turn onto a wire rack to cool.

Notes

This loaf is suitable to freeze for up to two months.
