Cheese and ham-stuffed chicken schnitzel

1.Preheat oven to 180°C. Line an oven tray with baking paper.
2.Place four pieces of schnitzel on a flat work surface. Top with the spinach, folded ham and cheese. Top with the remaining schnitzel to enclose, securing edges with toothpicks.
3.Place the seasoned flour, egg, and the combined breadcrumbs and parsley in separate shallow bowls. Dip the schnitzel parcels into the flour to coat, shaking off excess, then the egg, then the breadcrumbs, pressing firmly. Place on a plate. Cover with plastic wrap, then chill for 15 minutes.
4.In a large frying pan, heat the oil on medium heat. Cook schnitzel for 1 minute on each side or until just golden. Transfer to the prepared tray. Bake for 8-10 minutes or until cooked, adding the tomato in the last 5 minutes of cooking. Remove the toothpicks.
5.Meanwhile, cook the potatoes in a saucepan of boiling water for 10 minutes until tender, adding the beans in the last 3 minutes of cooking. Drain. Add the tomato, butter and extra parsley, tossing to combine. Drizzle with the sweet chilli sauce.
6.Cut the schnitzel in half. Serve with the potato, beans and tomato. Accompany with lemon wedges, if liked.
