Cheat's roast turkey with cranberry and port glaze

Cheat's roast turkey with cranberry and port glaze
- 2 kilogram frozen rolled turkey breast
- 1/6 cup cranberry sauce
- 1/2 cup port
- 1/2 cup brown sugar
- 2 grated zest, juice oranges
- rosemary sprigs, to garnish
- roast vegetables and steamed green beans, to serve
Method
Cheat's roast turkey with cranberry and port glaze
- 1Preheat oven to moderate, 180°C.
- 2Thaw turkey in fridge overnight. Place in a large baking dish with foil over and bake 1 hour. Remove foil.
- 3Meanwhile, in a jug, combine sauce, port, sugar, zest and juice. Brush half over turkey. Return to oven and bake a further 30 minutes.
- 4In a small saucepan, bring remaining sauce to the boil. Reduce heat to low and simmer 3 minutes.
- 5To make quick roast vegies, prepare and cut into similar-sized chunks. Place in a saucepan, cover with water, bring to boil and simmer 5 minutes. Drain well. Toss in oil. Arrange in baking dish. Bake 30-40 minutes, until crisp and golden.
- 6Serve turkey in slices with cranberry and port glaze, rosemary sprigs, roast vegetables and green beans.
