Cheat's pudding truffles
Please guests over the holidays with these pudding truffles, soaked in brandy and drizzled with a white chocolate sauce.

Cheat's pudding truffles
- 2 350g plum puddings
- 50 gram butter, melted
- 1/3 cup (35g) cocoa powder
- 1/4 cup (60ml) brandy
- 150 gram white eating chocolate, chopped
- 8 glace cherries, quartered
Method
Cheat's pudding truffles
- 1Break the puddings into small pieces in a large bowl.
- 2Combine butter with cocoa and brandy in a small bowl: stir until smooth. Add the butter mixture to the pudding and stir to combine.
- 3Roll rounded tablespoons of the mixture into 30 balls. Place onto a tray.
- 4Melt the white chocolate in a heatproof bowl over a saucepan of simmering water. Stand until it is thick, but pourable.
- 5Spoon a little chocolate over each pudding; top puddings with a piece of cherry. Refrigerate until firm.
Notes
Un-iced puddings suitable to freeze. Suitable to microwave.
