Method

1.Melt butter in a frying pan on medium heat. Sauté green onion and garlic for 2-3 minutes, until softened. Stir in mustard and verjuice to combine. Simmer for about 2 minutes, or until reduced by half.
2.Stir in cream and bring to boiling point. Remove from heat, add scallops and toss well. Preheat grill to high.
3.Transfer scallops to ovenproof serving dishes or back into shells with sauce.
4.Make Topping; in a bowl, combine all ingredients. Sprinkle over scallops. Cook under the grill for 2-3 minutes, until bubbling. Serve with lemon wedges.

To sterilise scallop shells, heat cleaned shells on an oven tray in a moderate oven, 180°C, for 5 minutes, before returning cooked scallops and sauce. Verjuice, made from pressed unripe grapes, is found near the vinegars at supermarkets.
