Cheat's christmas cake
  • 2 375g packets mixed dried fruit
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 1/2 cup sherry
  • 1 egg, lightly beaten
  • 1 470g packet carrot cake mix
  • 1 100g packet slivered almonds
  • 1/2 cup whole blanched almonds
  • 1 100g packet glace cherries

Method

    Preheat oven to moderately slow, 160°C. Lightly grease and line a 20cm round or square cake pan.

    In a large saucepan, combine dried fruit, water and oil; bring to boil on high. Reduce heat to low; simmer, uncovered, 5 minutes. Cool.

    Beat sherry and egg into fruit mixture. Add cake mix and slivered nuts; mix well.

    Pour into pan. Smooth surface. Top with blanched almonds and cherries in a pattern.

    Bake 90 minutes, or until cooked when tested with a skewer. Cool in pan. Remove from pan; store in an airtight container.
