Char-grilled sirloin steak with garlic butter

Method

1.Preheat oven to 220C.
2.Make garlic butter: Melt 20g butter in a small pan over medium-high heat. Add garlic and eschalot and cook for 2-3 minutes, stirring occasionally until tender and fragrant. Remove from heat, stir in mustard and paprika. Transfer to a bowl and refrigerate to cool. Beat in remaining butter. Season with salt and pepper. Stir in herbs and set aside.
3.Heat a char-grill pan over medium-high heat. Brush steaks with a little oil, season with salt and pepper. Cook on char-grill for 5-6 minutes, turning once until well-browned. Transfer to a baking tray and roast for 3-4 minutes until cooked to your liking.
4.Remove from oven, cover with foil and rest for 5-10 minutes.
5.Dollop with garlic butter and serve with French fries and rocket.
