Ingredients

Method

1.Line a 20cm round cake pan with foil.
2.Bring stock to boil in a saucepan. Add polenta and reduce heat to low; cook 5 minutes, stirring, until soft and thickened. Mix in parmesan. Pour into prepared pan and smooth surface. Chill 30 minutes, until firm.
3.Preheat a char-grill to medium. Brush vegetables with oil; char-grill 3-4 minutes each side, until tender. Set aside.
4.Turn out polenta and cut into 8 wedges. Brush each side lightly with oil; char-grill 5 minutes each side, until crisp and golden.
5.Drizzle vegetables lightly with balsamic vinegar and serve with polenta.
