Cauliflower pizza

It might sound crazy to make a pizza base from cauliflower but it works both in texture and flavour. Plus, gluten-free folk don’t need to miss out on enjoying a slice (or two, or three!) of scrumptious pizza.

Cauliflower pizza

1.Line a pizza or baking tray with baking paper. Preheat oven to 250°C.
2.Cut the cauliflower into florets and cook in a few centimetres of water, simmering for 6-7 minutes or until just cooked. Drain well. Process in a food processer until it resembles breadcrumbs.
3.In a bowl, mix the cauliflower with the egg, grated cheese, Parmesan, salt and pepper. Once combined, pat into a thin, 25cm round on the prepared tray, flattening with your palm – if you have leftover cauliflower mix, make an additional small pizza.
4.Bake for 10-15 minutes or until the edges are browned and the rest is golden.

5.To make the pizza sauce, simmer all of the ingredients in a saucepan for 10-15 minutes. Remove from the heat and cool.
6.Top the pizza with some of the pizza sauce, fresh mozzarella torn into pieces and cherry tomatoes. Bake until the cheese is melted and bubbly – another 10-12 minutes.
7.To serve, top with torn prosciutto pieces, fresh rocket and basil leaves.
