Ingredients

Method

1.Put yoghurt, ginger, 2 Tbsp lime juice, mint and salt in a blender and blend until smooth. With machine going, feed in the cashew nuts. Blend to a lumpy paste. Taste and add more lime juice if necessary and thin with more yoghurt or a little water.
2.Transfer to a serving bowl, cover and chill until needed. Garnish with a lime wedge and serve.
