Cashew nut brownie cookies

Nici Wickes' moreish cashew nut brownie cookies are ready in less than 30 minutes and are fantastic tin-fillers (and make a great lunchbox treat for the kids)

Ingredients

  • 125 gram butter
  • 1 cup sugar
  • 1 egg
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
  • 2 tablespoon cocoa
  • 1 cup roasted cashew nuts

Method

    Preheat oven to 180°C.
  • 2
    Cream the butter and sugar, then beat in the egg.
  • 3
    Sift in the dry ingredients and stir in the cashew nuts.

    Roll tablespoons of dough into balls and place on a baking paper-lined tray. Press slightly to flatten.

    Bake for 20 minutes.

Notes

Add the zest of 1 orange for a wonderful orange-choc flavour. Peanuts, chopped macadamia or almond nuts can be used instead of cashews.
