Method

1.In a large saucepan, heat oil on medium. Add carrot, onion and ginger. Cover and cook 10 minutes, stirring occasionally, until onion is tender.
2.Add stock, peel and orange juice, then bring to the boil. Reduce heat to low and simmer gently 20-25 minutes. Remove the orange peel.
3.Using a hand blender, puree mixture until smooth. Season to taste. Top with orange zest and coriander sprigs to serve.
