Carrot and cauliflower mash
  • 2 tablespoon fennel seeds
  • 500 gram cauliflower, cut into florets
  • 3 carrots, peeled, chopped
  • 2 tablespoon honey
  • 2 tablespoon cream

    Heat a frying pan over moderate heat. Add fennel seeds; cook, stirring, 2 minutes, or until golden and fragrant. Set aside.

    Place cauliflower and carrot in a steamer basket over a saucepan of boiling water; cover and cook 10 minutes, or until soft. Transfer to a saucepan over moderate heat.

    Add honey, fennel seeds and cream to cauliflower mixture; cook, stirring, over moderate heat 2 minutes, or until thickened slightly. Mash until smooth; season. Serve.
