Ingredients

Caramelised carrots
  • 30 gram butter
  • 1 tablespoon olive oil
  • 6 medium_piece (720g), carrots, sliced thickly
  • 2 tablespoon white sugar
  • 1 tablespoon fresh flat-leaf parsley, finely chopped
  • 1 tablespoon balsamic vinegar

Method

Caramelised carrots
  • 1
    Heat butter and oil in large frying pan, add carrots, cook, covered, until just tender.

    Add sugar, cook, stirring, about 10 minutes or until carrots caramelise. Stir in parsley and vinegar.

Notes

This recipe can be made several hours ahead, reheat just before serving.
