Caramel macadamia bars
These caramel macadamia bars are a definite luxury item. Sprinkled with icing sugar, they are a most delicious treat.

Ingredients
Caramel macadamia bars
- 1 cup halved macadamia nuts
- 1 cup self-raising flour
- 1/2 cup desiccated coconut
- 3/4 cup lightly packed brown sugar
- 125 gram butter
- 395 gram can sweetened condensed milk
Method
Caramel macadamia bars
- 1Grease and line a 19cm x 29cm slice pan with enough baking paper to cover base and extend up sides of pan.
- 2Sift flour into a bowl, stir in coconut and ½ cup of the brown sugar. Melt 100g of the butter in a small pan, add to dry ingredients and mix well.
- 3Press mixture over base of pan. Bake in a 180C preheated oven for 12 minutes or until lightly browned. Cool.
- 4Combine condensed milk with remaining sugar and butter in a small saucepan. Stir constantly over a low heat for 10 minutes or until butter is melted and mixture boils and thickens.
- 5Sprinkle macadamia nuts over slice base. Spread hot caramel evenly over macadamias and return to oven for a further 10 minutes or until caramel is light golden. Cool slice in pan.
- 6Use lining paper to lift slice from pan then cut into bars and sieve lightly with icing sugar if desired.
Notes
Slice will keep for several days in an airtight container.
