Caramel apple squares

Apple and caramel go together perfectly, and these caramel apple squares make a perfect afternoon tea treat or light dessert.

Caramel apple squares
  • 1 (sheet) butter puff pastry
  • 125 gram (4 ounces) unsalted butter, softened
  • 1/2 cup (110g) caster (superfine) sugar
  • 2 eggs
  • 3/4 cup (90g) ground almonds
  • 1/4 cup (35g) plain (all-purpose) flour
  • 1 teaspoon finely grated lemon rind
  • 60 gram (2 ounces) unsalted butter
  • 1/3 cup (75g) raw sugar
  • 3 apples (450g), peeled, quartered, cored, sliced thinly

    Preheat oven to 180°C/350°F. Grease 20cm x 30cm (8-inch x 12-inch) rectangular pan; line base and long sides with baking paper, extending paper 5cm (2 inches) over sides.

    Make caramel apples. Melt the butter in large frying pan over medium heat; add the sugar and apple. Cook, stirring occasionally, about 5 minutes or until apple is lightly caramelised. Remove from heat; cool 20 minutes. Place apple in medium bowl; reserve caramel sauce in frying pan.

    Roll pastry between sheets of baking paper until large enough to line base of pan. Press pastry into pan; trim edges. Refrigerate 20 minutes.

    Beat butter and sugar in small bowl with electric mixer until light and fluffy; beat in eggs, one at a time. Stir in ground almonds, sifted flour and rind. Spread mixture over pastry in pan; top with caramel apples. Bake about 30 minutes. Cool slice in pan before cutting.

    Reheat caramel sauce; drizzle over apples before serving.
