Caramel apple squares

Ingredients

Method

1.Preheat oven to 180°C/350°F. Grease 20cm x 30cm (8-inch x 12-inch) rectangular pan; line base and long sides with baking paper, extending paper 5cm (2 inches) over sides.
2.Make caramel apples. Melt the butter in large frying pan over medium heat; add the sugar and apple. Cook, stirring occasionally, about 5 minutes or until apple is lightly caramelised. Remove from heat; cool 20 minutes. Place apple in medium bowl; reserve caramel sauce in frying pan.
3.Roll pastry between sheets of baking paper until large enough to line base of pan. Press pastry into pan; trim edges. Refrigerate 20 minutes.
4.Beat butter and sugar in small bowl with electric mixer until light and fluffy; beat in eggs, one at a time. Stir in ground almonds, sifted flour and rind. Spread mixture over pastry in pan; top with caramel apples. Bake about 30 minutes. Cool slice in pan before cutting.
5.Reheat caramel sauce; drizzle over apples before serving.
