Method

1.In a large bowl, combine flour and creamed corn. Whisk in combined milk and egg. Season. Stir in capsicums, onion and curry powder. Set aside.
2.In a large nonstick frying pan, heat oil on medium. In three batches, fry ¼-cup quantities of mixture for 2-3 minutes each side until golden and cooked through.
3.For the salsa: In a medium bowl, combine tomato, avocado and lemon juice. Season to taste.
4.Serve fritters toppedwith salsa. Accompany with lettuce leaves.
