Capsicum and bacon flan

Filled with bacon, vegetables and herbs, this flan is perfect for a healthy lunchbox option. Just slice it up and hand it out to the whole family.

Ingredients

Method

1.Preheat oven to 180°C or 160°C fan forced. Lightly grease a 24cm (base diameter) ovenproof pie dish. Place on a baking tray.
2.Heat oil in a large frying pan over moderately high heat. Add onion and bacon; cook and stir for 3 minutes or until onion softens. Remove from heat; stir in capsicum. Cool slightly.
3.Whisk cream, eggs, flour, half the cheese and basil in a large bowl. Stir in capsicum mixture. Pour into prepared dish. Sprinkle remaining cheese over top of egg mixture. Bake for 25-30 minutes or until just set at centre. Remove from oven. Stand in dish for 5 minutes. Cut into wedges.

Omit basil. Use parsley or spinach leaves instead. You can use a leek or 6 green onions instead of a brown onion.
