Caprese salad

The combination of ripe heirloom tomatoes, creamy bocconcini and fresh basil leaves has long been an Italian favourite in this simple Summery salad.

Ingredients

Caprese salad
  • 5 truss tomatoes, sliced
  • 5 orange tomatoes, sliced
  • 340 gram fresh bocconcini, sliced
  • 100 gram grape tomatoes, halved
  • 100 gram cherry tomatoes, halved
  • 1 tablespoon white balsamic dressing or balsamic vinegar
  • 1 1/2 tablespoon extra virgin olive oil
  • 2 tablespoon small basil leaves

Method

  • 1
    Arrange truss and orange tomato slices with bocconcini around edge of a serving plate. Arrange grape and cherry tomatoes in centre. Season to taste.

    Drizzle with vinegar and oil and scatter with basil to serve.

Notes

For this simple salad, high quality ingredients are essential. You need ripe, tasty tomatoes and a good quality extra virgin olive oil. We chose a selection of different coloured and sized tomatoes, but you can vary this depending on what's available.
