Candied spiced nut clusters
  • 3/4 cup caster sugar
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chilli powder
  • 2 egg whites, at room temperature
  • 250 gram unsalted mixed nuts
  • 400 gram dark cooking chocolate, melted

    Preheat oven to 180°C (160°C fan-forced). Line a large baking tray with baking paper.

    Combine sugar, cinnamon and chilli in a bowl. Lightly whisk egg whites until foaming. Add to sugar mixture. Add nuts; stir to coat.

    Spread nuts over prepared tray in a single layer. Bake for 20 minutes, stirring halfway through cooking, or until golden. Cool on tray for 30 minutes. Break up nuts.

    Line 2 baking trays with baking paper. Combine nuts and chocolate in a large bowl. Spoon heaped tablespoons of mixture onto prepared trays. Chill for 1 hour or until set. Serve


You could also use milk or white chocolate.
