Calamari with lemon mayonnaise

1.To make lemon mayonnaise: Combine mayonnaise, juice and garlic in a small bowl. Chill mayonnaise until needed.
2.Cut calamari hoods in half lengthwise. Open out flat. Score inner surface of squid hoods in a crisscross pattern, then cut hoods in half crosswise.
3.Place flours in a medium bowl. Season. Toss calamari, in batches, in flour to coat; shake off excess.
4.Heat oil in a deep-fryer or large heavy-based saucepan over moderate heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry calamari, in batches, for 1-2 minutes or until lightly golden. Using a slotted spoon, transfer to paper towels. Serve with mayonnaise and lemon wedges.

Buy fresh cleaned calamari (squid) hoods from specialist fish shops and major supermarkets. Some supermarkets also sell frozen calamari to save time.
