Cajun kumara wedges with BBQ sauce

These scrumptious cajun kumara wedges are prefect served as an afternoon snack with BBQ sauce or enjoyed as a tasty side to complete a family meal

  • 2 teaspoon garlic powder
  • 2 1/2 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon onion flakes
  • 1 teaspoon cayenne pepper
  • 1 1/4 teaspoon dried oregano
  • 1 1/4 teaspoon dried thyme
  • 3 large Kaipara Red kumara, skin on, sliced into wedges

    Preheat oven to 180°C.

    In a bowl combine the salt, garlic powder, paprika, black pepper, onion flakes, cayenne pepper, oregano and thyme.

    Place wedges into a bag with oil and herb mix and shake to coat. When nicely covered, transfer to a baking tray, making sure the wedges are in one layer. Bake for 30 minutes or until crisp and just cooked through.

    Remove and serve with a bowl of BBQ sauce (see recipe below).
