Method

1.Preheat oven to 180°C.
2.Place two 1½ cup capacity ramekins upside down in a baking dish.
3.Weave four of the bacon slices together and place them over the top of a ramekin.
4.Thread another slice of bacon through the bacon and wrapped around the circumference of the ramekin. Secure this in place with kitchen string.
5.Repeat with remaining bacon on the other ramekin.
6.Cook for 15 minutes or until the bacon is well-coloured and crisp.
7.Carefully remove bacon basket from the ramekins and transfer to a plate.
8.Fill with lettuce, egg, croutons and drizzle with dressing.
9.Sprinkle with parmesan cheese, if using.
