Method

Buttermilk Waffles

1.Sift flour and salt together into a bowl. In a jug, whisk buttermilk, egg yolks and butter together. Gradually mix into flour until smooth.
2.For the sweet chilli and avocado yoghurt, in a bowl, mash yoghurt, avocado and sweet chilli sauce together.
3.In a small bowl, using an electric mixer, beat egg whites until soft peaks form. Lightly fold into batter with bran flakes.
4.Preheat a waffle iron and spray with oil. Spoon cups of waffle mixture into the centre of the waffle maker, spreading with a spatula.
5.Close and cook for 2-3 minutes until golden, then repeat with remaining mixture. Serve with bacon, tomatoes, mushrooms, rocket and yoghurt.

If you’d prefer to serve your waffles with a sweet topping, add 2 tablespoons sugar to the dry ingredients.
