Bunny cupcakes

Make these bunny cupcakes as an Easter treat and let the kids help decorate them. Using marshmallows, liquorice, M&Ms to create the bunny faces, these cupcakes are just as delicious as they are cute.

Method

1.Preheat oven to moderate, 180°C. Line 10 holes of 12-hole muffin pan with paper patty cases.
2.Combine sugar, butter, chocolate, water and milk in a medium saucepan. Stir over low heat until smooth. Transfer mixture to a medium bowl. Cool for 10 minutes.
3.Fold in combined sifted flours and cocoa with egg. Spoon mixture evenly into patty cases (see Notes).
4.Bake for 20-25 minutes, until cooked when tested. Cool in pan for 5 minutes, before transferring to a wire rack to cool completely.
5.BUTTERCREAM: Meanwhile, in a small bowl, using an electric mixer, beat butter until very pale. Gradually beat in icing sugar and milk in 2 batches. Spread over cakes.
6.Sprinkle tops of cakes with coconut. Decorate with liquorice for mouth and whiskers, Tic Tacs for teeth, M&M’s for eyes and nose, and marshmallow ears.

makes 10 Cupcake will not rise much, so fill them until about 1cm from top of paper cases
