Buddha bowl

Do you need a dose of green goodness? Assembling this fresh Buddha bowl is a simple dinner fix for any weeknight meal.

  • 1 UNCLE BEN’S Brown Rice Cup
  • handful baby spinach leaves
  • 1/2 cup prepared slaw (available from supermarkets)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 avocado, sliced
  • 2 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon raw almonds or walnuts, roughly chopped
  • 1 teaspoon each pumpkin, sunflower and sesame seeds

    Microwave the rice cup for 40 seconds, according to packet instructions. Transfer rice to a bowl and toss with spinach leaves, to wilt.

    To assemble the Buddha bowl, top rice with slaw, tomatoes and avocado.

    Make dressing by combining sesame oil, soy sauce and lemon juice in a small bowl. Drizzle dressing over the Buddha bowl, then sprinkle with nuts and seeds.
