Method
1.Microwave the rice cup for 40 seconds, according to packet instructions. Transfer rice to a bowl and toss with spinach leaves, to wilt.
2.To assemble the Buddha bowl, top rice with slaw, tomatoes and avocado.
3.Make dressing by combining sesame oil, soy sauce and lemon juice in a small bowl. Drizzle dressing over the Buddha bowl, then sprinkle with nuts and seeds.
