Buddha bowl
Do you need a dose of green goodness? Assembling this fresh Buddha bowl is a simple dinner fix for any weeknight meal.

Ingredients
- 1 UNCLE BEN’S Brown Rice Cup
- handful baby spinach leaves
- 1/2 cup prepared slaw (available from supermarkets)
- 1/2 cup cherry tomatoes, halved
- 1/2 avocado, sliced
- 2 teaspoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon raw almonds or walnuts, roughly chopped
- 1 teaspoon each pumpkin, sunflower and sesame seeds
Method
- 1Microwave the rice cup for 40 seconds, according to packet instructions. Transfer rice to a bowl and toss with spinach leaves, to wilt.
- 2To assemble the Buddha bowl, top rice with slaw, tomatoes and avocado.
- 3Make dressing by combining sesame oil, soy sauce and lemon juice in a small bowl. Drizzle dressing over the Buddha bowl, then sprinkle with nuts and seeds.
