Method
1.In a saucepan of boiling, salted water, cook the pasta according to packet instructions. Add broccolini for the final 30 seconds of cooking time.
2.Heat oil in a frying pan on high. Squeeze teaspoon-sized chunks of sausage mince from casings into pan. Cook for 5-6 minutes, stirring occasionally, until golden and cooked through. Mix in chilli, then remove from heat.
3.Drain cooked pasta and broccolini, then return to pan. Add pork, chilli and any cooking juices from pan to pasta. Toss well with cheese and season to taste. Scatter with nuts to serve.
You can swap goat’s cheese for ¾ cup grated parmesan and juice of ½ lemon.
