Method

Gluten-free pizza base recipe

1.Grease 2 oven trays and line with baking paper.
2.Sift the gluten-free flour, baking soda, salt and sugar into a large bowl. Pour in the egg, olive oil and water, then mix to combine.
3.Divide the dough into four portions and roughly knead each into a ball.
4.Working with each portion of dough, use floured hands to press and flatten, then roll out to your desired shape and thickness – I aim for an oblong shape. Transfer to a lined tray, ready for toppings. Makes 3-4 medium bases.

5.Preheat oven to 220-250°C.
6.Steam the broccoli until just cooked. Put in a food processor and pulse briefly to roughly chop. Mix in the lemon zest, juice and cheeses.
7.In a bowl, whisk together the sour cream, wine, cream and seasonings. Spoon this sauce over the pizza base and top with the broccoli/cheese mix.
8.Bake for 15 minutes until the broccoli is cooked and even charred in some places. Serve immediately.
