Brie and salmon
1.Preheat oven to moderate, 180°C (160°C fan forced).
2.Cut a cross halfway through each potato. Place on a foil-lined oven tray.
3.Fill evenly with artichokes and brie.
4.Bake 5 minutes until cheese melts. Top each with 2 slices of smoked salmon and a dollop of cranberry sauce.
