Bolognese and egg calzone

Calzone is taken to delicious new heights with this recipe for golden, homemade dough filled with hearty bolognese, stretchy mozzarella and tasty eggs. Perfect for brunch, lunch or dinner!

Method

1.In a small jug, combine water, yeast and sugar. Cover and set aside for 5 minutes until frothy.
2.Sift flour and salt together into a large bowl, then make a well in the centre. Add yeast mixture, mixing to form a dough. Knead on a lightly floured surface for 10 minutes until smooth and elastic. Transfer to a greased large bowl and cover with plastic wrap. Set aside in a warm place for 1 hour until doubled in size.
3.In a frying pan, heat oil and butter on medium. Cook onion for 15-20 minutes, stirring occasionally, until golden brown. Cool.
4.Preheat oven to 220°C. Lightly grease two oven trays.
5.Divide dough into four balls. Roll out on a floured surface to 5mm-thick rounds. Spread onion evenly over each, leaving a 2cm border, then top with Bolognese. Make a small indent and carefully crack an egg in each. Top with cheese and kale.
6.Brush edges of rounds with beaten egg. Fold dough over to enclose, pinching edges to seal. Brush tops with beaten egg, then put a small steam vent in top. Transfer to trays.
7.Bake for 12-15 minutes until golden and crisp. Serve with salad.
  • You can mix and knead this dough in an electric mixer with a dough hook.
