Bolognaise sauce

Everybody's favourite pasta sauce - bolognaise! This sauce is super nourishing, delicious, and a breeze to prepare!

Method

1.Heat oil in a large heavy based saucepan on high. Saute onion, celery, carrot, pancetta and garlic 3-4 minutes until vegetables are tender.
2.Add mince. Cook 4-5 minutes until well browned, breaking up lumps with the back of the spoon. Stir in tomato paste and cook 1 minute.
3.Mix puree, diced tomato, wine, bay leaves and dried herbs through mince mixture. Bring to boil. Reduce heat to medium and simmer 20-25 minutes until thickened. Season to taste.
4.Stir parsley through. Serve with hot cooked pasta of choice. Sprinkle with shaved parmesan if liked. Accompany with crusty bread.

Adding a pinch of sugar to taste enhances the natural sweetness of the tomatoes. This sauce freezes really well – its great to have a batch on hand. When cold, spoon serving quantities into freezer container or freezer bags. Seal well, label and freeze for up to 3 months.
