Boiled pineapple fruit loaf
  • 440 gram can crushed pineapple in natural juice
  • 1/2 cup chopped pitted dates
  • 1/2 cup sultanas
  • 1/2 cup caster sugar
  • 125 gram butter, chopped
  • 1 teaspoon mixed spice
  • 1 teaspoon nutmeg
  • 1 teaspoon ground cinnamon
  • 1/4 cup chopped pecans
  • 1 cup self-raising flour
  • 3/4 cup wholemeal self-raising flour
  • 1/4 teaspoon bicarbonate of soda
  • 2 eggs, beaten

Method

Boiled pineapple fruit loaf

    Preheat oven to 180°C (160°C fan-forced). Lightly grease and line a 10 x 20cm loaf pan with baking paper.

    In a medium saucepan, combine pineapple and juice, dates, sultanas, sugar, butter and spices. Stir over a low heat, until sugar dissolves. Bring to boil. Cook 3 minutes. Transfer to a large bowl; cool.

    Stir in nuts. Sift combined flours and soda together, returning husks. Fold into fruit mixture with eggs. Spoon into pan.

    Bake 30-35 minutes, until cooked when tested with a skewer. Cool in pan 5 minutes. Transfer to a wire rack to cool completely.

Notes

This fruit loaf freezes well in individual portions, making it great for lunches.
