Ingredients

Method

1.Preheat oven to 180°C (160°C fan-forced). Lightly grease and line a 10 x 20cm loaf pan with baking paper.
2.In a medium saucepan, combine pineapple and juice, dates, sultanas, sugar, butter and spices. Stir over a low heat, until sugar dissolves. Bring to boil. Cook 3 minutes. Transfer to a large bowl; cool.
3.Stir in nuts. Sift combined flours and soda together, returning husks. Fold into fruit mixture with eggs. Spoon into pan.
4.Bake 30-35 minutes, until cooked when tested with a skewer. Cool in pan 5 minutes. Transfer to a wire rack to cool completely.

This fruit loaf freezes well in individual portions, making it great for lunches.
