Blueberry muffins

Ingredients

Blueberry muffins
  • 2 cup self-raising flour
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup caster sugar
  • 2/3 cup milk
  • 125 gram butter, melted
  • 1 egg, lightly beaten
  • icing sugar, to dust

Method

    Preheat oven to moderate, 180°C. Line a 12-hole muffin pan with paper patty cases or spray lightly with oil.

    Sift flour into a large bowl. Stir in blueberries and sugar. Make a well in centre of dry ingredients.

    In a jug, blend together milk, butter and egg. Mix into dry ingredients until just combined (about 16 strokes).

    Spoon into pan until 2/3 full. Bake 15-20 minutes, until cooked when tested. Cool on a wire rack. Dust, with icing sugar to serve. Store in an airtight container.

Notes

All these muffins can be prepared ahead of time, as they freeze well.
