Ingredients
Blueberry muffins
- 2 cup self-raising flour
- 1 cup blueberries (fresh or frozen)
- 1/2 cup caster sugar
- 2/3 cup milk
- 125 gram butter, melted
- 1 egg, lightly beaten
- icing sugar, to dust
Method
Blueberry muffins
- 1Preheat oven to moderate, 180°C. Line a 12-hole muffin pan with paper patty cases or spray lightly with oil.
- 2Sift flour into a large bowl. Stir in blueberries and sugar. Make a well in centre of dry ingredients.
- 3In a jug, blend together milk, butter and egg. Mix into dry ingredients until just combined (about 16 strokes).
- 4Spoon into pan until 2/3 full. Bake 15-20 minutes, until cooked when tested. Cool on a wire rack. Dust, with icing sugar to serve. Store in an airtight container.
Notes
All these muffins can be prepared ahead of time, as they freeze well.
