Ingredients
Dressing
- 1 1/2 tablespoon white wine vinegar
- 1 1/2 tablespoon macadamia oil
- 3 teaspoon honey
Blue cheese, pear and macadamia salad
- 1/4 cup macadamia nuts
- 2 pears, unpeeled, cored, thinly sliced
- 100 gram mixed lettuce leaves
- 80 gram creamy blue cheese, crumbled
Method
Blue cheese, pear and macadamia salad
- 1Toast macadamias by tossing in a dry pan over a medium heat 2-3 minutes until golden. Nuts also may be toasted in the oven at 180°C for 5 minutes. Cool, then chop roughly
- 2In a large serving bowl, combine pears, lettuce leaves, cheese and macadamias.
- 3Just before serving, drizzle dressing over salad and toss to combine.
Dressing
- 4Whisk vinegar, oil and honey in a small jug.
Notes
If you don't like blue cheese, try using sliced brie or camembert. Olive oil can be used in place of macadamia oil.
