Ingredients
Blue cheese, apple & barbecued chicken slaw
- 1/3 cup (45g) flaked almonds
- 2 carrots
- 1 green apple, peeled
- 1/4 red cabbage, shredded finely
- 3 cup shredded barbecued chicken
- 1/3 cup chopped fresh chives
- 100 gram gorgonzola dolce or other mild blue cheese, crumbled
- 2 tablespoon mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1/4 teaspoon caster sugar (superfine sugar)
Method
Blue cheese, apple & barbecued chicken slaw
- 1Make dressing. Whisk ingredients together in a small bowl; season to taste.
- 2Place nuts in a dry small frying pan over low heat, tossing frequently, for 2 minutes or until golden. Transfer to a large bowl.
- 3Cut carrots and unpeeled apple into matchstick-sized pieces.
- 4Add carrot and apple to large bowl with cabbage, chicken, chives and cheese; toss gently to combine.
- 5Transfer slaw to a platter, drizzle with dressing; season with freshly ground black pepper.
Notes
You will need a barbecued chicken weighing about 900g (1¾ pounds).
