Blue cheese and pear loaf
This Nici Wickes blue cheese loaf is like a giant muffin, all fluffy and cheesy and studded with pieces of sweet pear. It's so easy to pull together - making it a fantastic recipe to have up your sleeve for any unexpected guests.

Ingredients
- 2 1/4 cups plain flour
- 1 1/2 tsp baking powder
- Large pinch of salt
- 1 pear, finely diced
- 100 g blue cheese, cubed or crumbled
- 3 medium eggs
- 2/3 cup yoghurt
Method
- 1Preheat oven to 180°C. Line a loaf tin with baking paper.
- 2In a large bowl, mix the flour, baking powder and salt. Add in the chopped pear and cheese, then toss. Lightly whisk the eggs with the yoghurt and pour this into the dry ingredients, folding to combine into a wet, scraggy dough.
- 3Scrape into your loaf tin and bake for 45-50 minutes or until a skewer comes out clean. Cool for 5 minutes, then turn out to cool completely.
- 4Eat fresh on the day or it will keep well. It's also quite scrumptious toasted.
