Ingredients

Blue cheese and caramelised onion dip
  • 20 gram butter
  • 1 brown onion (250g), chopped coarsely
  • 2 tablespoon brown sugar
  • 2 tablespoon white wine vinegar
  • 90 gram blue cheese, crumbled
  • 3/4 cup crème fraîche
  • 1/4 cup finely chopped fresh flat-leaf parsley

Method

    Melt butter in medium saucepan; cook onion, stirring, until softened. Add sugar and vinegar; cook, stirring, over low heat, about 10 minutes or until onion is caramelised.

    Stir in cheese and crème fraîche until smooth. Cool. Cover; refrigerate until cold. Stir in parsley.
