Method
1.Preheat oven to 200°C. Line a baking tray with baking paper.
2.Place bread slices on tray and brush with oil. Bake for 5-6 minutes. Turn, brush with oil and bake for another 3-4 minutes until golden.
3.In a medium frying pan, heat remaining oil on medium. Cook bacon for 5-6 minutes, stirring until golden and crisp. Drain on a paper towel.
4.Place lettuce on a platter. Top with bacon, tomato and onion.
5.In a bowl, whisk together mayonnaise, lime juice, chives and hot sauce. Drizzle over salad.
6.Serve topped with fried eggs and a sprinkling of extra chives.
Note
- Replace bacon with prosciutto or salami, if preferred.
