Ingredients

BLT pasta salad
  • 250 gram penne pasta
  • 250 gram rindless bacon, thinly sliced rashers
  • 2 torn baby cos lettuce
  • 250 gram cherry tomatoes, halved
  • 1/3 cup parmesan cheese, grated
Dressing
  • whole egg
  • 1/4 cup mayonnaise
  • 2 teaspoon wholegrain mustard
  • 2 teaspoon lemon juice
  • 1 tablespoon chives, finely chopped

Method

BLT pasta salad
  • 1
    Cook pasta in a large saucepan of boiling salted water following packet instructions. Drain well and cool.

    Meanwhile, heat a medium non-stick frying pan on high. Saute bacon 2-3 minutes, until crisp.

    To make dressing, in a small jug, whisk all ingredients together. Season to taste.

    In a large salad bowl, combine pasta, lettuce, tomatoes and bacon. Drizzle dressing over and sprinkle with parmesan.

Notes

For a variation, add sliced avocado and toasted croutons made from stale bread.
