Method
1.Cook pasta in a large saucepan of boiling salted water following packet instructions. Drain well and cool.
2.Meanwhile, heat a medium non-stick frying pan on high. Saute bacon 2-3 minutes, until crisp.
3.To make dressing, in a small jug, whisk all ingredients together. Season to taste.
4.In a large salad bowl, combine pasta, lettuce, tomatoes and bacon. Drizzle dressing over and sprinkle with parmesan.
For a variation, add sliced avocado and toasted croutons made from stale bread.
