Blackcurrant, blueberry and juniper berry preserve

This is almost like a chutney in flavour; it’s tart and a little sweet and the juniper berries give a lovely, peppery, aniseed flavour.

Ingredients

Blackcurrant, blueberry and juniper berry preserve
  • 2/3 cup frozen organic blueberries, defrosted (use fresh if available)
  • 2 tablespoon raw honey or pitted dates (add more if you like it sweeter)
  • 2 tablespoon lemon juice
  • 1/4 clove frozen organic blackcurrants, defrosted (use fresh if available)
  • 1/2 teaspoon roughly crushed, whole dried juniper berries

    Blend the blueberries with the raw honey and lemon juice in a high-speed blender until smooth.

    Add the blackcurrants and crushed juniper berries and stir until well combined.
