Blackberry and apple slice
A kiwi favourite, this slice is wholesome indulgence.

Blackberry and apple slice
- 2 cup flour
- 3/4 cup brown sugar
- 175 gram butter, roughly chopped
- 1 egg yolk
- 3 tablespoon cold water
- 3 green apples, peeled and finely sliced
- 2 cup blackberries
- 1/4 cup sugar
- 1/2 cup flaked almonds
Method
Blackberry and apple slice
- 1Preheat oven to 180°C. Place flour and sugar in a bowl and rub in butter until mixture resembles coarse breadcrumbs.
- 2Make a well in the centre and mix in egg yolk and water. Turn out onto a floured surface and lightly knead. Press half of the pastry into lined 20 x 30cm slice pan.
- 3Cover pastry with sliced apple, blackberries and sprinkle with white sugar.
- 4Scatter over remaining shortcake mixture and top with flaked almonds.
- 5Bake for 45 minutes until shortcake is golden and crisp. Cover the top with foil if it browns too quickly.
