Bircher muesli
This bircher muesli recipe is healthy, nutritious and easy to make. Just whip up the night before, place in the refrigerator and you'll have breakfast waiting for you in the morning.

Ingredients
Bircher muesli
- 1 1/2 cup rolled oats
- 1 granny smith apple, peeled, grated
- 1 cup apple juice
- 1/2 cup skim milk
- 1/2 cup low-fat vanilla yoghurt, plus 1/2 cup extra, to serve
- 2 tablespoon pistachio kernels
- 2 tablespoon walnuts
- 2 tablespoon slivered almonds
- 250 gram punnet strawberries, sliced
- 125 gram punnet blueberries
Method
Bircher muesli
- 1In a bowl, combine oats, apple, juice, milk and yoghurt. Mix well. Cover with plastic wrap and chill overnight.
- 2Preheat oven to moderate, 180°C. Spread the nuts onto an oven tray and bake for 4-5 minutes, until lightly toasted. Cool, then roughly chop.
- 3Spoon the muesli into bowls. Top with combined berries, extra yoghurt and toasted nuts to serve.
Notes
Low-GI oats keep you satisfied longer and are full of soluble fibre that can lower cholesteral.
