Oreo-stuffed chocolate chip cookies

Big-choc-chip Oreo cookies
  • 185 gram butter, softened
  • 3/4 cup caster sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cup plain flour
  • 1 cup self-raising flour
  • 1/2 teaspoon salt
  • 1 cup milk chocolate chips
  • 265 gram packet Oreo cookies

    Preheat oven to moderate, 180°C. Line two oven trays with baking paper.

    In a medium bowl, using an electric mixer, beat butter and sugars together until pale. Add eggs, one at a time, beating well after each addition. Beat in vanilla.

    Mix in the sifted combined flours, salt and chocolate chips until well combined.

    Roll 1/3 cup of dough into a ball, then press an Oreo in the centre. Wrap dough around to enclose. Flatten slightly, then place on oven trays 5cm apart.

    Bake for 15-20 minutes until golden. Cool on trays for 5 minutes before transferring toa wire rack to cool completely. Store in an airtight container.
