Berry juice jellies

Jellies will keep kids happy whenever you’re entertaining as they never seem to tire of them! Mum would make jellies as a treat for pudding or, if we were really lucky, she’d put them in our lunch boxes frozen and they’d then thaw out over the day. Why are jellies so fascinating to children? I think it’s the thrill and intrigue of wondering how something that can wobble so deliciously can still hold together.

Ingredients

Method

1.Sprinkle gelatine over cold water in a small bowl or cup, then allow to soak and swell for 2-3 minutes.
2.Make a sugar syrup by simmering water and sugar for 7 minutes. Add gelatine mixture to warm sugar syrup and stir until gelatine is dissolved completely.
3.Add strained berry juice and mix before pouring into individual assorted glasses or jars, topping with a few berries in each.
4.Place in fridge until cooled and set – at least 2-3 hours. Patience is a virtue!
5.Serve with whipped cream.
