Berry crumble for one
Nici Wickes always has frozen berries on hand so she can whip up a crumble at the drop of a hat - not a bad rule to live by, in our opinion! A crumble is very easily scaled down for one, like in this sweet and simple recipe.

Ingredients
- 1/2 cup fruit – Nici used thawed berries and chopped tamarillos
- Splash of water
- 2 tbsp butter
- 2 tbsp rolled oats
- 1 tbsp plain flour
- Pinch baking powder
- 1 heaped tbsp caster sugar
- 2 tbsp chopped roasted almonds, or nuts of choice
- Whipped cream, yoghurt or ice cream, to serve
Method
- 1Heat oven to 180ºC. Grease a large ramekin or other single-serve ovenproof dish.
- 2Add the fruit and water to your ramekin, then place in the oven to heat while you prepare the crumble.
- 3In a small bowl, rub the butter together with the oats, flour, baking powder and sugar. Stir through the nuts. I like to then squeeze the mixture together into small clumps as I transfer it to the top of the fruit.
- 4Cook for 30 minutes or until the top is golden and crunchy.
- 5Serve with whipped cream, yoghurt or ice cream – or all three!
