Berry and coconut cobbler

You don’t need to be camping to enjoy a scrumptious skillet dessert like this deliciously sweet berry and coconut cobbler. So grab the family as this cobbler is bound to bring a taste of adventure

  • 3 cup mixed berries (frozen or fresh)
  • 2 tablespoon honey
  • icing sugar, to serve (optional)
  • 1 1/2 cup desiccated coconut
  • 3/4 cup self-raising flour
  • 2 eggs, beaten
  • 1/4 cup honey or raw sugar
  • 1/3 cup coconut cream, plus extra to serve

    Place topping ingredients in a bowl and mix. Place berries in a large skillet and drizzle with honey. Spoon over topping (it doesn’t matter if it doesn’t fully cover the berries).

    Cook over low-medium heat for 10-12 minutes or until set. Dust with icing sugar, if using. Serve with coconut cream.


If you have access to one, pop the cobbler under a grill for a few minutes to brown up the top.
