Berry and coconut chia puddings
This berry and coconut chia puddings are naturally sweet and packed full of the goodness of chia seeds to keep you fueled for the day. Enjoy a little pot for breakfast, dessert or a mid-morning snack.

Berry and coconut chia puddings
- 2 1/2 cup (625ml) coconut milk
- 1/3 cup (55g) white chia seeds
- 1 teaspoon vanilla extract
- 2 tablespoon honey or pure maple syrup
- 1 medium banana (200g), chopped coarsely
- 1 tablespoon finely grated orange rind
- 3 cup mixed berries (see tips)
Method
Berry and coconut chia puddings
- 1Place coconut milk, seeds, extract and honey in a large bowl; cover, refrigerate for 1 hour or overnight until thick.
- 2Blend or process coconut milk mixture with banana, rind and 2 cups of the fruit. Spoon into six 3/4-cup (180ml) serving glasses; refrigerate for 30 minutes or until pudding has thickened. Top with remaining fruit to serve.
Notes
You could add some pitted cherries to the berry mix, if you like; use whatever combination of berries you like. Puddings can be made a day ahead; store, covered, in the fridge. Top with extra berries just before serving.
