Beetroot and orange superfood salad

  • 1 large beetroot, peeled
  • 2 medium carrots, peeled
  • 1/2 cup mint, coarsely chopped
  • 1/4 cup sultanas
  • 1/4 cup walnuts, lightly toasted
  • zest of ½ an orange
Orange honey dressing
  • juice of ½ an orange
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 50 millilitre olive oil

    Make the orange honey dressing (see below).

    Grate or spiralise the raw beetroot and carrot and place in a stain-resistant bowl. Add the mint, sultanas, walnuts and orange zest, and toss to mix.

    Mix the orange honey dressing through the salad. Serve on its own for a power-packed lunch or as a side dish.

    Combine the ingredients in small bowl.


  • Include other nuts and seeds for extra crunch. You can also add a handful of baby spinach leaves. - To turn this into a more hearty meal, add baby spinach leaves and top with your choice of grilled meat.
