Beetroot and orange superfood salad
Need a big hit of veges? This beetroot and orange superfood salad recipe ticks all the boxes. Healthy, raw and packed with natural goodness, this is a delicious power-packed lunch or side dish

Ingredients
- 1 large beetroot, peeled
- 2 medium carrots, peeled
- 1/2 cup mint, coarsely chopped
- 1/4 cup sultanas
- 1/4 cup walnuts, lightly toasted
- zest of ½ an orange
Orange honey dressing
- juice of ½ an orange
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 50 millilitre olive oil
Method
- 1Make the orange honey dressing (see below).
- 2Grate or spiralise the raw beetroot and carrot and place in a stain-resistant bowl. Add the mint, sultanas, walnuts and orange zest, and toss to mix.
- 3Mix the orange honey dressing through the salad. Serve on its own for a power-packed lunch or as a side dish.

- 4Combine the ingredients in small bowl.
Notes
- Include other nuts and seeds for extra crunch. You can also add a handful of baby spinach leaves. - To turn this into a more hearty meal, add baby spinach leaves and top with your choice of grilled meat.
