Method
1.Combine flour, paprika, salt and pepper in a medium bowl. Add beef; toss to coat. Combine oil and onion in a 3-litre (12-cup) microwave-safe bowl. Microwave on High (100%) for 2 minutes or until soft. Add tomato paste; microwave on High (100%) for 40 seconds.
2.Add mushroom soup, consomme, sauce and beef mixture to onion mixture. Stir until well combined. Cover with plastic food wrap microwave on High (100%) for 12 minutes. Add sour cream and mushrooms; stir to combine. Cover; microwave on High (100%) for 6 minutes more.
3.Spoon rice into shallow serving bowls. Top with stroganoff and sprinkle with parsley. Serve at once.
For an extra vegie hit, add vegetables to stroganoff such as beans or peas for the last 2 minutes of cooking time. You’ll find consomme in the stock aisle; otherwise, use chicken stock.
