Beef stroganoff

This dish, which hails from Russia, is a creamy and warming main that uses lean strips of beef, mushrooms with paprika adding a mild spicy flavour.

Ingredients

Method

1.Heat half the oil in a large frying pan over moderate heat. Cook beef, in batches, for 3 minutes or until seared. Transfer to a heatproof plate.
2.Add remaining oil to pan. Add onion and garlic; cook and stir for 2-3 minutes or until onion softens. Add tomato paste; stir. Return beef to pan. Stir in mushroom, capsicum and stock. Bring to the boil. Reduce heat. Simmer, covered, for 10 minutes or until sauce thickens slightly.
3.Meanwhile, cook pasta in a large saucepan of boiling salted water for 10 minutes or until tender. Drain; return to pan. Add butter; stir to combine.
4.Combine cornflour, cream and paprika in a small bowl. Stir into beef mixture. Cook, stirring, for 2 minutes or until mixture boils and thickens. Remove from heat. Season with salt, Spoon pasta into serving bowls. Top with stroganoff. Serve sprinkled with dill.

You can use bought beef strips but these are usually more expensive. Serve with rice or risoni. Not suitable to freeze.
